From my previous post, I'm trying Keto and we are on day 4!
On Sunday I did meal prep:
I chopped Romaine and used salad spinner to dry, then put in a paper towel and Ziploc.
Chopped up red, and yellow peppers
I cut chicken breast in half and marinated in Ken's Greek dressing. I then grilled them and have on hand.
I diced 2 pounds of bacon and cooked to have on hand.

Day one and two were ok. I felt a little out of sorts on Monday night, but was fine on Tuesday.
So Monday I had a chaffle with avocado, bacon, jalapeno jack cheese, and tomato.
For my chaffle:
Beat one egg. In a separate bowl combine shredded mozzarella, seasonings of your choice, and just enough of the egg to wet the mozzarella. Using too much will make them less crispy, and fluffy. You will need a mini waffle maker, get that here Heat the cheese on one side about 3 min. flip and do the other side. Then repeat for the next layer. Add your ingredients and you have a sandwich minus the carbs!
I have to admit, I was not hungry after that sandwich, like at all! So for dinner I had pepperoni bites.
For the pepperoni bites: I used my silicone mini muffin tins, and cookie sheet. Get that here
Spray the pan with a cooking spray and put a thin layer of mozzarella cheese at the bottom. It has to be thin if you want them to be crispy! Add your pepperoni on the top and put in oven at 425 for 10-15 min depending on how crispy you want them. Put on paper towel to drain excess grease.
The next day I had a chaffle again, but this time, I sauteed chopped peppers, sausage crumbles and the remaining egg in a pan and used that as my filling.
For lunch I had a yummy salad with chicken, chopped bacon, chopped lettuce, chopped peppers and chopped feta and olives. These were things I had prepped on Sunday, so it was so easy to quickly put together!
For dessert I had fresh blueberries with freshly made whipped cream. For whipped cream, add to a bowl a 1/4 cup whipping cream, dash of vanilla, and sweetener of your choice. I used stevia.
So far, I haven't felt hungry at all. I feel pretty good. I'll post an update on Sunday!
