In your Dutch oven, you're going to sear your roast. Coat with olive oil, salt, pepper, and a dusting of flour. I grabbed a chuck roast, oh and by the way, you could just use short ribs as well... Sear your meat on all sides and then take out and put aside. In the video, I did the veg 1st.. Do the meat first... Add in your mirepoix equal parts carrot, onion and celery. Add in garlic, and then a lot of red wine. Stir up all the bits and pieces off the bottom and let cook down until it looks like a syrup. Add 1/2 a box of beef broth some thyme and a bay leaf. Add back in the meat, cover and cook on 300 for 5 hours.
I like to serve this with a cheesy polenta and biscuit.
When the beef is done, take the meat out and drain the juices of all the mirepoix, thyme, etc. This is your gravy. Serve with your sides and put gravy on the top.
