Cooking with Chuck Roast 2 amazing Recipes

Faux Short Rib with cheesy polenta

Ingredients:

3lb chuck Roast corn meal

Olive oil to coat pan 1 cup milk

Salt/pepper to coat beef 1 cup chicken Broth

1 cup chopped carrot 1/2 Cup cream cheese

1 cup chopped onion 1 cup parmesan or whatever cheese you love

1 cup chopped celery butter

2-3 T tomato paste

1/2 bottle of Cabernet Sauvignon

3 cups Beef Stock

1 T garlic

2 T Italian seasoning

2 T flour

In your dutch oven, coat your pan with olive oil and heat up. Add your salt and peppered chuck Roast to the oven. Once you have a sear on all sides, go ahead and take out the beef, place on a plate to put back in later.

Now you will add your veggies, the carrot, onion, celery mixture (mirepoix). Add in your red wine, and scrape the bottom for anything that is stuck to the bottom, let this simmer for a good 5 min. You want the alcohol to burn off and just leave flavor. Add in your beef stock, garlic, italian seasoning and the chuck roast. Put the covered dutch oven in the oven at 325 for 3-4 hours.

About 45 minutes before you take out your Roast, start the polenta. To a pan add butter, broth, and milk. Bring to a simmer and add your cornmeal. Start small with your cornmeal according to the package and continue adding until you get the consistency you want. Add in your cream cheese and other cheese.

When your Beef is done, take out of the oven, take the beef out and put on a platter. Drain the broth into a bowl, you're just straining out all the veg and cover your beef with the strained liquid.


Shredded Beef Sandwiches

Ingredients

3lb chuck Roast

Salt pepper to cover roast

1 cup chopped onion

1T. garlic

olive oil

beef broth

italian seasoning (you could use packet of italian dressing seasoning)

Granulated garlic

hot pepper flakes

hoagie rolls

provolone slices

hot giardiniera


To your Dutch oven, coat bottom with olive oil. You will then add in onions and garlic until soft. Add in your salted and peppered chuck roast. Get a sear on all sides of the roast and add in 1/2 box of beef broth. Add in your seasonings, cover and put in oven at 300 for 4 hours. When the beef is done, prepare your buns. Add 2 slices of provolone and melt in oven, add your shredded beef, and giardiniera. So Good!
