This was gobbled up! It was so heavenly that even my kids ate it!
For the chicken:
4 large chicken breasts
1/2 t. cumin, 1/2 t. coriander, 1/4 t. cayenne, 1t. salt in a bowl, mixed and spread on chicken breasts. Let that marinade at least 1 hour.
Combine 1 cup plain whole milk yogurt, couple tablespoons olive oil, 2 T. garlic, 1 T. ginger and set aside until your chicken breasts have marinaded. You will then put on a grate and broil until the internal temp reaches 160. When done, tent for 5 min. and cut into cubes.
For the sauce:
In a deep pot or Dutch oven... Get mine HERE.
Add olive oil to pan, add in 1 large yellow onion. 2T garlic, 2t. ginger, 1 serrano chili, (in the video I mention my favorite knife, Get it HERE.) When that is all combined add in a T. of tomato paste, 1 T. garam masala, 1 28oz. can of crushed tomatoes, 1t. sugar, 1t. salt, then add in 1 cup heavy cream and fresh cilantro.
Toss in your cubed chicken and serve over rice.
