Chicken soup with day 2 and 3 ideas!

You're going to start with making a Chicken stock. I grab a whole raw chicken cut up. This is usually the cheapest option. You can also just use chicken thighs and breasts... Put your whole chicken in a large stock pot and add in celery pieces, (bottom, and top) Add in carrots, the bottoms, and onion pieces... I usually add in some peppercorns and a bay leaf... This is all to just make a stock...

DON'T HAVE A LOT OF TIME? Just grab a rotisserie chicken and extra large box of Chicken broth...

In a separate pot, add olive oil and mix in chopped yellow onions, carrots, and celery (mirepoix). Add in a lot of garlic and heat until softened. While this is cooking, chop up a napa cabbage into thin strips and chop up your parsley.

When the Chicken is looking done, Strain the pot making sure to save a lot of the stock. Cut the chicken into little pieces. Add the chicken and broth to the veg and also add a box of chicken stock. Add a generous amount of salt and pepper. Add in your cabbage and parsley then bring to a boil.




The next day we are going to make a delicious creamy pasta dish.

Grab a generous portion of your leftover soup, mostly veg and chicken. Heat that in a large skillet. I'm loving my Hexclad pots and pans. Get them here. When the mixture is heated, add in butter, and an equal amount of flour. Let the flour cook for a bit and add a little broth from the leftover soup to thin the flour, keep adding until you get a nice thick consistency. You'll then add in about a 1/2 cup of heavy cream. To the sauce add in your Egg noodles!

You can either do a little crock with a biscuit on top or you can use a pie crust. You make the filling just like you did for the day 2, but instead of adding the noodles, you put in a pie crust. Be sure to make it thick!
