I already posted the recipe, but since I was meal prepping today, I figured I'd make a video... ugh! (Lol, didn't realize how many wires I have in my kitchen).. what I like about this salad is there's no wilted lettuce, so it really is a great make ahead lunch...
***Also, if you have a nut allergy, a good substitute is slow roasted Chickpeas for the crunch
3/4 c. Cooked bulgar
3/4 c. Chickpeas
3/4 c. Cucumber
Sprinkling of chopped mint and parsley
1T chopped red onion
3T chopped pistachios
3T feta
Lemon juice salt pepper to taste
