3 meals for under $20, yes it can be done.....

So I'm going to start with making a basic chicken soup, and for that you will need the following:


2 lbs. Cut up raw chicken pieces. If they have the package that is a whole chicken cut up, then get that, if they don't have that, get the breast and thighs...

3-4 small yellow onions

4-5 carrots

4-5 celery stalks

couple garlic cloves

celery

chicken broth

parsley

whole peppercorns


For Day 2 you need flour, butter, half and half, and egg noodles

For Day 3 you need flour, butter, and store bought biscuits


In a large pot, fill 1/2 with water, place all the chicken pieces along with the scraps from your onion, carrot, celery, garlic and parsley and a handful of whole peppercorns and bring to a boil.


In a separate pot, add chopped onion, carrot, celery, garlic to 2T. olive oil until soft.


Take the chicken pieces from the large pot and start chopping and adding to the pot with your vegetables. Drain the pot that the chicken came from and discard everything except the broth that is left.


Add 1/2 the broth and the box of chicken broth to a large pan and sprinkle with parsley, salt and pepper to taste.




So for Day 2, you just need your chicken soup and 2T. butter and 2T. flour, 3 if you like it thicker.


In a fry pan add the butter and flour to make a roux. To the roux, keep adding scoops of the soup.... When it is thick, add about a 1/2 cup of half and half. In a separate pot, boil up some egg noodles, drain and add to the sauce mixture...


Day 3 is pretty much the same, but you will need to add more of the chicken and veg than the broth. Make it thick... Put into a pie pan, or ramekins and cover with store bought biscuits. Throw in the oven according to package directions...
